This is a wonderful soup when you're sick. You can extend it with 1/2 can chicken broth if it looks too milky for your taste. I also will double this recipe if I want it to last more than one meal.
The lime is the key... don't omit the lime!! You can use soft corn tortillas instead of crisp taco shells, or leftover roast beef or pork in place of chicken. I'm thinking it would be great for leftover holiday turkey too. I ran out of taco shells and used the leftover chicken mixture on tortilla chips for chicken nachos the next day.
I couldn't find arugula I substituted spinach and I put in canadian bacon instead of regular bacon. I really squeezed out the liquid in the spinach so the quiche would set well.
