Squash Pie (Yellow Neck squash)

Ingredients

  • 4-5 Yellow neck squash (1 3/4 cups after cooking)
  • eggs
  • evaporated milk
  • brown sugar
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. vanilla
  • 9" unbaked pie crust
Cooking Instructions
Cook and drain squash..mash squash well.
Add:
3eggs...slightly beaten
1 cup evaporated milk
1 cup brown sugar...firmly packed
1 3/4 cups squash.
Add the salt,cinnamon,ginger & vanilla
Pour into a 9" unbaked pie shell.
Bake for 55 minutes.
