Tom Kha Gai (Coconut Soup)

Servings:
Combine coconut milk, chicken, cabbage, galanga, lemon grass, and lime leaves. Cook until steamy and cabbage is done. Add fish sauce, lime juice, dried red peppers, and mushrooms. Bring to a boil and serve hot. Notes This is a wonderful soup when you're sick. You can extend it with 1/2 can chicken broth if it looks too milky for your taste. I also will double this recipe if I want it to last more than one meal. |
