Tom Kha Gai (Coconut Soup)

Ingredients

  • 1 cans coconut milk
  • 1/2 lb sliced chicken breast (cooked)
  • 5 slices dried galanga (kha)
  • 1 Tbs. chopped lemon grass
  • 5 kaffir lime leaves
  • 3 Tbs. fish sauce
  • 1/4-1/2 head cabbage
  • 3 Tbs. lime juice
  • dried red pepper
  • 1/2 cup sliced mushrooms
Cooking Instructions
Combine coconut milk, chicken, cabbage, galanga, lemon grass, and lime leaves. Cook until steamy and cabbage is done. Add fish sauce, lime juice, dried red peppers, and mushrooms. Bring to a boil and serve hot.
Notes
This is a wonderful soup when you're sick. You can extend it with 1/2 can chicken broth if it looks too milky for your taste. I also will double this recipe if I want it to last more than one meal.
